About the Recipe

Pata pie in crunchy form! These cookies can be crunchy or soft, depending on baking time. They are ridiculously easy to make and plant based, which makes them the best, sweet treat.

Ingredients

  1. 100 g pata


  2. 40 g honey


  3. 50 g soft brown sugar


  4. 50 g roasted almonds, chopped


  5. 50 g all-purpose flour


  6. ¼ tsp cinnamon


  7. ¼ tsp baking soda


  8. A pinch of salt


  9. 1 sachet vanilla sugar


  10. 1 Tbs olive oil


  11. 1 Tbs fresh orange juice or water


  12. ¼ cup hemp seeds


Preparation

  1. Preheat oven to 175 C fan.


  2. In a bowl mix pata, sugar and honey.


  3. Grind almonds and flour together in a blender or food processor. Add mixture to the pata bowl, together with the cinnamon, baking soda, salt, olive oil, vanilla and orange juice or water. Mix to combine.


  4. In a small bowl, make small balls with the cookie mixture and roll it in the hemp seeds. Flatten each bowl slightly with the palms of your hands. Place on paper lined baking trays. Bake at 175 C fan for 12 to 14 minutes until golden. (14 minutes will give you a crunchier cookie).
